Hola y'all! If you know me, you know my home is happiest when it is full of people. There is something about a backyard full of folks, a good playlist, and a table that looks a little too pretty that just makes a house feel like a home. A full table is one of my favorite blessings, and I really do believe a home full of the people you love is one of the good gifts God gives us. And here is my hosting philosophy in one sentence: the food should look impressive and taste amazing, but I am NOT spending my whole party in the kitchen missing the fun.
So every recipe below is make-ahead or barely-cook, feeds a crowd, and travels well to a cookout. These are my summer regulars, the ones people ask me for every single time. Steal them all.
Prep everything the night before and keep it in pretty serving dishes in the fridge. When people arrive, you pull, you pour, you sit down. A calm host is the whole vibe. Nobody remembers a stressed one.
1. Watermelon Feta Salad
This is the one that disappears first, every time. Sweet, salty, cold, and gorgeous on the table.
- Cubed seedless watermelon (about half a melon)
- Crumbled feta
- Fresh mint, torn
- Thinly sliced red onion (soak it in cold water 10 minutes to mellow the bite)
- A drizzle of olive oil, a squeeze of lime, and a little flaky salt
Toss it gently right before serving so the feta stays pretty. A splash of balsamic glaze on top makes it look like you fussed. You did not.
2. Peach Caprese Skewers
A little southern twist on caprese, and peaches are at their absolute best right now.
- Fresh peach wedges
- Mini mozzarella balls (bocconcini)
- Fresh basil leaves
- Cherry tomatoes if you want the classic pop of color
- Balsamic glaze and flaky salt to finish
Thread peach, mozzarella, basil, tomato onto little skewers, line them up on a board, and drizzle. This is the easiest "wow" appetizer there is, and it photographs like a magazine.
3. Grilled Street Corn (Elote Style)
My little nod to the Mexican side of my family, and a guaranteed showstopper at any cookout.
- Ears of corn, grilled until a little charred
- A mix of mayo and a spoonful of sour cream
- Crumbled cotija (or feta in a pinch)
- Chili powder or Tajín, and chopped cilantro
- Lime wedges for squeezing
Slather the grilled corn, sprinkle everything on top, and finish with lime. Want it easier to eat and share? Cut the kernels off into a bowl and make it "esquites" (street corn salad) instead. Same flavor, way less messy.
4. Big-Batch Peach Tea Punch
A drink dispenser on the table means you are not playing bartender all night. Bless.
- Brewed sweet tea, chilled
- Peach nectar or peach juice
- Lots of fresh lemon slices and peach slices
- Fresh mint and plenty of ice
- Make it grown-up with a splash of bourbon or peach schnapps, served on the side so everyone can choose
Stir it up in the morning, keep it cold, and let it look pretty on the table. The fruit floating in there does all the decorating for you.
5. No-Bake Berry Icebox Cake
The dessert you make the night before and pull out to actual gasps. No oven, no sweat, in July.
- Whipped topping or fresh whipped cream
- Graham crackers
- Fresh berries (strawberries, blueberries, raspberries)
- A little vanilla and a touch of lemon zest in the cream
Layer cream, graham crackers, berries, and repeat in a dish. Cover and chill overnight so the crackers soften into cake. Top with fresh berries before serving. Cool, creamy, red-white-and-blue pretty, and done in advance.
